No there are not open work permit in Greece. EU nationals don̢۪t need a work permit to work in Greece. But non EU do need a visa to work in Greece. The only way for a non EU to get work in Greece if an employer offers you a job. Greece updated its residency laws at the beginning of 2006 and has continued to do so since then. Any non-European national wanting to work in Greece needs to have their employer file a request for an opinion on the use of foreign labor prior to his/her arrival in Greece. Following filing of the request, the Ministry of Labor determines whether they want to have a non-EU person to do a job. The file is then forwarded to the local police for their OK. Following approval, the file is forwarded to the Ministry of Foreign Affairs, which grants a favorable opinion and authorizes the Greek Consulate with jurisdiction over the applicant̢۪s usual place of residence to issue the right visa. After arrival in the country, a residency permit is issued. These are issued for one year, and this is renewable up to five times. Some information suggests that nationals who do not require an entry visa may be issued a work permit within two to three months. Nonetheless, you'll all but have to get the right entry visa since local officials don't seem to allow conversions of status

Yes you need a work visa. With the collapse of the Greek economy this may be next to impossible.

If you've only got an American passport, not one from an EU country, you need to have a job offer before leaving the States. But to get a job the employer will need to prove that there is no Greek or other EU citizen available to do the job. So, unless you have some job skills that are not available in Greece or Europe, that's next to impossible. US citizens are allowed to visit Greece for up to 90 days without a visa but can't work during that time. And, while long-stay visas are available, you will need to show that you can support yourself financially during your stay in Greece as you will not be allowed to work on this visa either.

How can you intern or gain 'work experience' in Greece?
I would like to gain 'work experience' this summer or be an intern, but i just dunno how to start, i'm 17 and i live in greece. please guys you need to help me.

First , see if your school can help. You can also see if your parents or other people that you know can help. That is called networking. Look at local newspapers under help wanted and see if they have some internships. Finally, you can write to some companies and express your interests in an internship./
